You definitely know its Strawberry season when the prices start to drop. My boys are really enjoying the strawberries this season and on the weekend we stocked up. We may have bought a bit more then we could eat before they weren’t of eating quality so before this happened I revisited my Easy Homemade Strawberry Jam Recipe. It is so easy to make and I had forgotten how good it tasted.
We also cleaned out the freezers on the weekend, two of them, a dedicated stand up freezer and the freezer with the fridge. It is one of those jobs you put off but boy does it feel good to know exactly what’s in the freezer when your planning your meals.
In the freezer I found some frozen mixed berries not enough to make anything spectacular but just enough to make some mixed berry muffins with an added swirl of my strawberry jam and viola I made the scrummiest mixed berry muffins.
I have simply used my basic muffin recipe and added the mixed berries and strawberry jam.
INGREDIENTS
2 Cups Self Raising Flour
1/2 Cup Sugar
1 Egg
1 Cup Milk – substitute with your favourite milk weather it is skim, soy, almond etc
1/4 Cup Light Olive Oil – substitute for melted Nuttlex, margarine or butter
1 Tsp Vanilla Essence
1/2 Cup mixed frozen berries
2 Tbs Strawberry Jam
LET’S PUT IT ALTOGETHER
1. Place all ingredients except the mixed berries and strawberry jam into a large bowl and mix until just combined.
2. Fold through the mixed berries and strawberry jam. Divide the mixture into a greased 12 hole muffin pan.
3. Bake in a 180 degree Celcius oven for 15-20 minutes or until lightly golden and they bounce back when touched.
Freezer Friendly – Place into individual zip lock bags for school or work morning teas.
Store in the fridge for up to 5 days
Makes 12 muffins
