Weekly Meal Plan #6

Welcome to another plan of what we ate last week for dinner meals.  I hope you have been finding the meals plan useful when planning your meals for the week.

It was a Public Holiday on the Monday so some slow roasting on the Weber Q was in order and had enough roast lamb to make two meals for the week.  Using leftover roast meat is one of my top ways of cooking.  The hard work is all done for meal number one and meal number two is a simply throw together meal.  If you find you don’t have any leftover roast meat, consider buying a larger cut or roasting two at once, you will thank yourself in the coming days when meals are a breeze to prepare.

Dinner meals for the week were as follows:

SUNDAY

With hubby at work I ate the meal I made for the boys.  Baked Eggs, with sausage and toasties in the Air Chef.  This recipe will be available in the coming weeks.

MONDAY

Public holiday so we roasted a leg of lamb and ate that for lunch followed by Risotto Balls for dinner, this recipe will also be available in the coming weeks.

TUESDAY

Today was a work day (I don’t normally work on Tuesday but swapped my Monday work day).  I was grateful to have the leftover roast lamb to whip up a quick and easy Satay Curry Lamb with Vegetables and Noodles.  One pot wonder. Leave me a comment if you would like this recipe posted.

WEDNESDAY

Another work day and another super quick meal.  Chicken Parmigiana with Chips and Salad.

THURSDAY

Work day again and the BBQ made dinner easy tonight.  Simple BBQ Rump with Salad, I cooked pasta for the boys as well.

FRIDAY

I didn’t make it to the shops so we used what we had.  BECLT (Bacon, Egg, Cheese, Lettuce, Tomato).  The boys had Pita Bread pizzas.

SATURDAY

Each week this is my night off from cooking.  The one break a week keeps you going for the rest of the days each week.

    i always have left over roast lamb – looking forward to this satay recepie.
