This week’s meal plan is ready to go. It is a public holiday today in Queensland making it a long weekend and that changes up a few of our dinner meals. Sunday night is normally roast chicken night but this has been swapped to Monday night. I use the leftover chicken on sandwiches so I like to cook it the day before we need it for that.
I am slow cooking a whole roast beef this week. This will give us two meals. The second meal will be hand beef pies which I will explain below.
MONDAY – Roast Chicken
TUESDAY – Tacos
WEDNESDAY – Slow Cooker Roast Beef
THURSDAY – Hand Beef Pies – I will shred the leftover slow cooked beef and then mix it with the leftover vegetables and gravy. This will then be the filling that will be put between two squares of puff pastry, sealed and cooked in the oven until the pastry is golden and puffed up.

SATURDAY – BBQ Marinated Chicken Pieces with Coconut Rice and Broccoli
SUNDAY – Crumbed Prawns and Fish with Salad
