As we move into the colder weather we tend to forget about salads. They made a regular appearance during Summer and then they simply get forgotten. I wanted to add some colour, taste, and nutrition to a meal of air fried chicken drumsticks so I got creative with a lovely head of fresh broccoli, in season avocados and apples, the result was amazing. I even had enough to enjoy for lunch at work.
1 Head of Broccoli, cut into small flowerettes.
2 Red Apples, core removed and sliced finely
1 Carrot, grated
1 Small Onion, sliced finely
1/3 Cup Sultanas
Juice of 1/2 Lemon
1/2 Cup Cream
Salt and pepper
LETS PUT IT ALL TOGETHER
1. In a large bowl place all the sliced fresh ingredients.
2. In a separate small bowl mash the avocado and add the lemon, cream and salt and pepper to taste. Mix well. Pour over the ingredients in the large bowl and mix to ensure everything gets a good coating.
Serves 6-8 side serves or 4 main meals.
Best enjoyed on the day of making. It will slightly discolour due to the avocado however it was ok the next day. Store in an airtight container in the fridge.
