Dark Chocolate and Seed Mix Discs

Chocolate is my nemesis especially when that time of the month is approaching (you know what I mean).  So since I am trying to make a big conscious effort to only eat all the good things chocolate has had to drop to the bottom of that eating list.  I did however find a way to enjoy a sneaky few bites with a few added “healthier” items for good value.

70& dark chocolate melted down with a little coconut oil and sprinkled with seeds and sultanas are now my favourite new way to enjoy chocolate.  Being dark chocolate means that just one little disc is actually enough to satisfy those chocolate cravings and the seeds add some great crunch and texture.

INGREDIENTS

125gm 70% Dark Chocolate (I used Aldi’s brand)

1 Tbs Coconut Oil

Seed and sultana mix or tr almonds as well

LET’S PUT IT ALL TOGETHER

  1. Break the chocolate into a microwave safe bowl.  Add the coconut oil.  Melt in the microwave on medium high for 30 second bursts stirring after each 30 seconds until melted.
  2. Line a baking tray with baking paper and spoon chocolate onto it to form discs.
  3. Top with a sprinkle of the seeds and sultanas and then place into the fridge to set.  Make sure the surface is flat.
  4. Remove from the baking paper and store in an airtight container in the fridge.
