1 Sheet of shortcrust pastry
250 grm Pumpkin sliced finely
1/2 Zucchini Grated
3 Cups Silverbeet Sliced finely
1 Cup Grated Cheese
Salt & Pepper
Place the pastry onto your dish – I used a fairly shallow glass dish for this.
Slice pumpkin, silverbeet
Grate Zucchini & Cheese
In a bowl add the egg and milk and whisk.
Add the zucchini, cheese, Silverbeet, salt & pepper.
Place a layer of pumpkin onto the pastry, then pour all the wet ingredients ontop.
Place another layer of pumpkin on the top.
Sprinkle with a little extra grated cheese.
Optional add a few slices of brie.
Bake in a 150 degree oven for 50mins or until set.
