MARINATED CHICKEN DRUMSTICKS WITH STUFFED MUSHROOMS

INGREDIENTS  

MARINATE

1 Cup BBQ Sauce
1/4 Cup Soy Sauce
1/4 Cup Honey
1 Tsp Gourmet Garden Chunky Garlic
1 Tsp Gourmet Garden Chilli
1 Tsp Gourmet Garden Coriander
1 Tsp Giurmet Garden Ginger
 8 Chicken Drumsticks

  1. Place all ingredients in a large zip lock bag and squish around to combine.
  1. Add the chicken drumsticks to the bag and move them around to coat. 
  2. Place in the fridge to marinate for a few hours before cooking.  

MUSHROOM STUFFING 

50gms Softened Butter
1 Tsp Gourmet Garden Chunky Garlic
1 Tsp Gourmet Garden Thyme
1/2 Onion, chopped finely
Salt & Pepper to taste
Parmasen Cheese

  1. Combine all ingredients together. 
  2. Wash and remove the stalks of the mushrooms. 
  3. Stuff with the infused butter and place on a lined baking tray. Sprinkle with Parmesan cheese.  

LET’S PUT IT ALTOGETHER

  1. Place the marinated chicken on a lined baking tray and place in a hot 200 degree oven. 
  2. Cook for 30 minutes. 
  3. After 30 minutes turn the oven down to 180 degrees and add the tray of stuffed mushrooms to the bottom shelf and cook for a further 20-25 minutes or until they are both cooked.  
  4. Enjoy with a side salad.

MY THOUGHTS AND FURTHER SUGGESTIONS:

The herb and garlic butter used to stuffed the mushrooms would also be a perfect to:

  • STUFF CHICKEN 
  • MAKE GARLIC BREAD 
  • PLACE ON A COOKED STEAK 
  • STIR THROUGH COOKED PASTA 
  • ROLL IN CLING WRAP AND STORE IN THE FRIDGE/FREEZER TO HAVE ON HAND TO SPICE UP A MEAL. 

Experiment with different combinations of herbs to see which one your family likes.
