Mango n’ Cream Ice Creams

Mangoes are in abundance at this time of year and the weather here is Queensland, Australia is HOT which means mangoes get ripe very quickly.

The shops sell them super cheap when they are overripe making them perfect for peeling and freezing for smoothies or turning them into ice creams like I did today.
This super easy recipe is so yummy you will want to eat them all.
Variations from suggestions on Facebook were to use Coconut milk or cream with added macadamia nuts for a flavour the same as a Weis bar. You could also use strawberries.
INGREDIENTS
2 Overripe mangoes, peeled, and flesh removed
1/3 Cup Thickened Cream
LET’S PUT IT ALTOGETHER 
1. Place the mango flesh and cream in a food processor with the metal blade and process until smooth.
2. Pour into ice block moulds and freeze until hard. About 4 hours.

Serve immediately once out of the freezer.
Makes 6

    Re thickened cream for the mango n cream ice creams, can I use light double cream?

      Hi yes you can, you can also try yoghurt.
