Pancakes don’t just have to be for breakfast. They also make the perfect dessert. Easy to make and even easier to eat you will be making these chocolate pancakes over and over again.
Enjoy them as they are or load them up with ice cream, strawberries, cream, chocolate sauce, caramel sauce (you get the idea) they can be as naughty or nice as you want them to be.
I have used bicarbonate soda and vinegar in the batter as this will give the pancakes extra rise and make them light anf fluffy.
INGREDIENTS
1 1/2 Cups Self Raising Flour
1/3 Cup Sugar
1/4 Cup Cocoa
1 Egg
1 1/2 Cups Milk
1/2 Tsp Vinegar
1/2 Tsp Bicarb
LETS PUT IT ALL TOGETHER
1. Place all the ingredients in the order listed above into a bowl or large just. Then whisk well to combine. Sit aside for 10 minutes to give the batter time to develop.
2. Lightly grease a large fry pan with cooking spray. Spoon in batches of the batter. Cook until the top starts to form bubbles and then flip and cook for another minute. Remove from the pan and continue cooking until all the batter is used.
Enjoy with the added extras as suggested above.
Great for school lunchboxes as well.
Makes 12-15 small pancakes.
Store in airtight container in the fridge for up to 5 days.

I have to leave a comment! We’ve made these about 10 times in the past few weeks, they are my eldest daughters new favourite breakfast, and the rest of us have them with vanilla ice-cream or creme fraiche as a treat.
I’ve been adding about 1/3 of a cup of chocolate chips to the batter, they are just perfectly melted for an extra blast of chocolate – yum.
