Soup weather is just about here. I know I have already made a few batches over the past couple of weeks as we have had cooler weather in the evening and it reminded me how much I love the cooler weather for all the wholesome meals you get to cook and eat.

First up I have the delicious and flavoursome D’Orsogna Streaky Bacon, Pumpkin & Sweet Potato Soup. All made in the Bellini, from the chopping, sauteing, cooking and blitzing it is all made in the same jug from start to finish.
The addition of the streaky bacon to this normally vegetable only soup adds a depth of flavour and texture….perfect.

1 Pkt D’Orsogna Streakyt Bacon, cut into strips
100gm Sweet Potato, peeled and diced
400gm Pumpkin, peeled seeded and diced
1 Onion, peeled and cut in half
1 Litre Hot Chicken Stock (or enough to cover the vegetables in the jug)
LET’S PUT IT ALL TOGETHER
1. Place the sliced D’Orsogna Streaky bacon into the Bellini jug. Set speed 2, 130 degree celcius for 12 minutes. Remove from the jug.
2. Add the onion to the jug. Speed 5, 5 seconds.
3. With the Bellini running on speed 6 add the diced pumpkin and sweet potato until broken down. Approx 10 secs.
4. Add the hot stock to the vegetables in the jug. Set to speed 3, 130 degree celcius for 16 minutes. Leave the MC (measuring cup off or on a tilt in the lid as it will splatter out).
The soup should be smooth by this time. If not, set to speed 3 for 10 seconds.
Add the cooked bacon before serving.
