Apple and Oat Slice

Slices, biscuits, cakes, muffins all staple lunchbox fillers I find myself regularly making and freezing for the week ahead.  I also find myself experimenting with different combinations and using up things that need to be eaten (like the 5 small apples that were past being ok to eat, but still good for cooking with).  This is how the apple and oat slice was created and then enjoyed during the coming week.

The combination of the sweet apples and hearty oats make it a perfect morning tea snack.

INGREDIENTS

5 Small Red Apples, grated
1 Cup Rolled Oats
3/4 Cup Self Raising Flour
1 Cup Plain Flour
1/4 Cup Raw Sugar
1 Tsp Cinnamon
100ml Olive Oil
2 Eggs

LETS PUT IT ALL TOGETHER

1. I grated the apples using my food processor to save time, but a hand grater will work just as well.  Place the grated apples and all dry ingredients into a medium bowl.  Mix well to combine.

2. In a smaller bowl or jug whisk together the olive oil and eggs then pour into the dry ingredients, mix well to combine.
3. Pour into a lined square baking dish, level off and place into a preheated 180 degree celcius oven for 25 minutes, or until lightly golden and it bounces back when touched.

Cut into slices – I cut mine into 16 slices.

Store in the fridge for up to 7 days in an air tight container.

Freezer friendly: place slices into zip lock bags and freeze for up to three months.

TIP: Try swapping some of the grated apple with grated carrot.

    Could you replace the eggs with banana. Or would I need to use Egg-like, ( an egg substitute)???
    Due to fatal allergy to eggs!

      I would recommend and egg substitute as the eggs make the slice light and fluffy.

        I would beat 1/4 banana puree with 1/4 cup of almond or oat milk until its fluffuas an egg replacement

      Hi Laura. I would say no as the banana is a completely different texture to the apple and it would change the consistency of the slice. Any other fruit like pear, peaches, apricots would work.

      Yes you can. Use the recommended conversion amount.

    Thinking about trying with wholemeal flour for one measure, and also coconut oil instead of olive. Do you think I would need a bit more liquid with the wholemeal flour? Thanks!

      You can swap the self raising flour for wholemeal self raising flour and add 1/4 cup of milk to compensate for the wholemeal flour. Swapping the olive oil for coconut oil I’m not sure is a good idea as it will change the flavour and the density of the slice.

    Hi there,
    Just wondering if the olive oil can be replaced with butter (melted & cooled). My family is not keen on the taste of the oil (although I don’t mind it). If not, are there any other replacements you’re able to suggest? Thank you.

      Hi June, I left them on to add a fleck of colour through the slice. You could peel if you wanted too.

      Hi Leah, yes you could it would just change the sweetness level depending on which one you use.

      Hi Melissa you could or you could or you could use quick oats as they are cut up smaller and won’t have as much texture.

      Replace with plain flour and had 1 teaspoon of baking powder for ever cup of flour.

    Hi Amanda, great recipe! I just baked a batch, however mine is quite soft in texture and spongy. Is that supposed to be? Or could I have baked a slightly longer?

      HI Michelle, both fresh or tinned will work.
