5 Ingredient Ham and Cheese Lunchbox Scrolls

Finding alternatives to sandwiches for the school lunchbox this year as been at the top of my list.  I can tell that the boys get sick of sandwiches when we hit the second semester so I want to alleviate ‘sandwich fatigue’ and up my variety from the beginning.

I am using my favourite D’Orsogna Honey Leg Ham which comes in the 4x100gm Family Value pack and is only $5 at Woolworths.  Being able to open only one section at a time means I have fresh ham all week.

INGREDIENTS

100gm D’Orsogna Honey Leg Ham (400gm Family Value Pack)
1 Cup Plain Greek Yoghurt
1 1/2 – 2 Cups Self Raising Flour
1/2 Cup Passata
3/4 Cup Grated Cheese
Optional: Dried Italian Herbs

LET’S PUT IT ALL TOGETHER

1. In a large bowl mix together the greek yoghurt and 1 1/2 Cups of the flour.  Mix with a butter knife to form a dough.  If it seems to sticky add the remaining flour.  Turn onto a well floured bench.  Roll out to form a rectangle.  You want it to be about 1cm thick (don’t make it thin otherwise it will stick to the bench and it won’t roll).

2. Spread the passata over the dough, sprinkle on the dried herbs if using.  Top with the ham and cheese.

3. Roll from the long end until it forms a log.  Cut into 2-3cm thick sections and place onto a lined baking tray.

4. Place into a preheated 180 degree Celsius oven and bake for 25-30 minutes or until golden.

Enjoy straight away or allow to cool completely before wrapping individually and placing in the freezer.

These can be frozen for 1 month and simply taken from the freezer in the morning and placed into the lunchbox.  They will defrost by lunchtime.

    Made these today, they taste delicious and not time consuming, however the 2nd lot i did i didnt line my tray, as the 1st lot stuck to the baking paper because of the cheese. I dont think you need to line the tray if it is non-stick, makes it easier to take them off 🙂

    They look really good-however one granddaughter is vegetarian. So I made half with ham – ok. The other half I just had cheese and passata. Not a hit. What can I add which adds protein and a tang for the veggie?? any suggestions please
