Overnight Chia Seed Pudding

My regular readers will know that I cook with pretty basic family ingredients.  I do this as it fits my budget, my family eats it and we get all the goodness we need from the basic ingredients like grains, dairy, meats, fruit and vegetables.  There are however two “superfoods” that I do incorporate into a regular meals because we like them and I can see good value from them.

These are chia seeds and quinoa.  I always add a sprinkling of chia seeds to my cakes and biscuits and smoothies and it works well for us.  Of late I have been concentrating on making myself a healthy easy breakfast and this overnight chia seed pudding has been perfect during the hotter weather.  It also keeps me full and is a great nutritional start to my day.

INGREDIENTS

3 Tbs Chia Seeds
3 Tbs Natural Yoghurt
100ml Milk
1/2 Tsp Vanilla Essence
1 Tbs Honey
Handful frozen berries (optional)

Topping: Fresh banana sliced, natural seeds and sultana mix

LETS PUT IT ALL TOGETHER

1. In a glass jar or container with a lid add all the ingredients (except the topping).  Place the lid on and give it a good shake. Place in the fridge.  Before you go to bed, give it another good shake or stir with a spoon as you will find some clumping of the chia seeds at the bottom.

2. In the morning the chia seeds will be completely swelled up and you will have a pudding consistency.  Top with sliced banana and the seed and sultana mix.

Note: Because Chia Seeds a high in fibre, it is recommended that you gradually incorporate them into your diet, which means I wouldn’t recommend eating this every morning.  Once to twice a week is ideal.

    can this be made in advance for the 2 or 3 days or have to be made nite before

      It sure can be. It would be ok to eat u to 4 days after making.

    Would this be suitable to give a toddler for breakfast??

    Can we use either black or white chia seeds and any kind of milk like almond coconut milk?

      Yes either are fine.
