Apple, Blueberry and Yoghurt Cake Slice

This apple, blueberry and yoghurt slice is deliciously moist and bursting with apple and blueberry flavour in each bite. It is a simple one bowl hand mix that requires no fussing around and can be made by the little members of the family.

A great combination of fruit, dairy and fibre packed into each slice.  Perfect for the school or work lunchbox.

I have used fresh blueberries, however frozen are perfectly fine as well.  If you don’t like blueberries simply leave them out or swap them for strawberries of raspberries.  The apple can also be swapped with pear, it really is a versatile little slice recipe.

INGREDIENTS

3/4 Cup Self Raising Flour
3/4 Cup Wholemeal Self Raising Flour
3/4 Cup Dessicated Coconut
1/2 Cup Raw Sugar
3/4 Cup Greek Yoghurt
1 Egg
100ml Olive Oil
1 Large Apple, diced
1/2 Cup Blueberries

 

LETS PUT IT ALL TOGETHER

1. Place all the ingredients except the apple and blueberries into a large bowl and mix until just combined.

2. Add the apple and blueberries and gently stir through.  Spoon into a lined 20cm x 20cm baking pan.  Place into a 180 degree Celsius oven and bake for 25 minutes or until lightly golden and it bounces back when touched.

Allow to cool before slicing into 16 squares.

Store in an airtight container in the fridge for up to 7 days.

Freezer friendly: Place portions into a freezer safe container or ziplock bags and freezer for up to 3 months.  When ready to eat, remove from the freezer and allow to defrost.

    Hi Amanda, totally excited to make this recipe. Except I don’t have wholemeal flour or Greek yoghurt do you have any suggestion replacements on these items?

      Hi Maddo, you can use all normal self raising flour. The Greek yoghurt can be replaced with sour cream or buttermilk. To make butter milk simply add 1 Tbs of white vinegar to milk and allow to sit for 5 minutes before adding,

      One is normal self raising and one is wholemeal self raising so yes two 3/4 cups of each type of flour,.

    Can you use normal vanilla yoghurt instead of greek yoghurt?

      Yes you can. As it is sweeter than greek yoghurt you can reduce the added sugar a little to compensate.

    These are amazing, I’ve been making as 12 muffins and my mum thought they were cafe bought!
    Only using white flour and slowly reducing sugar to see what I can get away with.

    Is the mixture supposed to be quite dry and sticky? Can’t wait to try these. First time making them. Oh and I didn’t have coconut so I put almond meal in. Do you think it will work?

      Hi Emma, how did they turn out? I wouldn’t recommend replacing the coconut with almond meal as it will change the texture and flavour. That is why it would of seemed dry and sticky because the almond meal was swapped and it would of needed a bit more liquid to make it smooth.

      Hi Linda yes you can use the suggested oils. You can swap blueberries for another berry.

    Don’t be afraid to mix it up – I make mine with coconut sugar and mixed berries and hubby has claimed its the best slice ever – even over store bought so adapt to suit your family – great recipe Amanda ?

      You could use rice bran oil.

    So if I don’t have wholemeal self raising can I use 2x 3/4 cups normal self raising?
    Also which favour apples? I have pink lady or green smith at home.

      Yes you can. Any apple will work, I normally have granny smith apples in my fridge.

      You can simply omit or replace with some almond meal.

    Thank you for the recipe. I just made it and it is really tasty. Not too sweet with slight acidity from the fruits which goes really well with the coconut flavour. The crumb is soft. I substituted the olive oil with melted coconut oil. The batter turned out quite dry (unlike a cake batter) and needed to be gently pressed into the slice tin. This is a keeper recipe for us!

    Can i use ordinary full fat milk instead of yogurt – and same quantity as the yogurt?

      The yoghurt is what gives it it’s texture and taste. Changing to milk will make it a thinner batter and cake slice.
